Stevia

An extraction process extracts the sweet substances from the stevia plant. This results in a very sweet white stevia powder.

In the Netherlands stevia is available at garden centres under the name 'Honingkruid' (honey leaf). Stevia can also be grown as an annual plant. Plant the cuttings in the garden in spring (after the last night frost). The plants can grow up to 1.50 m tall. Dried leaf is estimated to be several dozen times sweeter than sugar; an exactly measured figure is missing from the scientific literature.

Stevia and nutrition

The Acceptable Daily Intake (ADI) for steviol glycosides (the sweet substance in stevia) is set at 4 mg per day per kg of body weight. A person weighing 60 kg may therefore consume 240 mg per day. This equals 30 SteviJa Zoetjes per day, or 210 drops of SteviJa Naturel (more than 100 cups of tea!). SteviJa Zoetpoeder consists of steviol glycosides and inulin. The intake of inulin is not limited by the ADI, but may cause flatulence. In terms of stevia, 88 grams of SteviJa Zoetpoeder per kg of body weight may be consumed.

Yes, SteviJa products are entirely gluten-free and lactose-free.

Carbohydrates is a collective name for different kinds of sugars, sweeteners and starch. During digestion carbohydrates are converted into glucose and so provide energy. They can be divided into digestible and indigestible carbohydrates.

Digestible carbohydrates are easily broken down into glucose and absorbed by the blood. They have a great influence on metabolism and weight; a surplus is stored as fat. On a low-carbohydrate diet you therefore eat fewer digestible carbohydrates.

Indigestible carbohydrates are so complex that they are hardly broken down and absorbed, if at all. As a result they have hardly any influence on metabolism and do not count in a low-carbohydrate diet.

An indigestible carbohydrate is erythritol. This carrier belongs to the group of polyols: an ideal sugar substitute for many diets. Bear in mind that excessive use may have a laxative effect. SteviJa uses erythritol in several products; see the list of ingredients.

Stevia in your own products (jam, wine, ice cream)

Stevia is available in several varieties, from mildly sweet fresh leaf to concentrated extract that in diluted solution is about 200 to 350 times sweeter than sugar. Each variety has its own use:

  • Stevia leaf: fresh or dried, for example finely chopped in a fruit salad, in iced tea or as herbal tea.
  • SteviJa Zoetpoeder: powder with inulin for coffee, tea and dairy, also suitable for cooking and baking.
  • SteviJa Kristal: crystals with erythritol for coffee, tea and dairy, also suitable for cooking and baking.
  • SteviJa Liquid Natural: gives a sweet taste to yoghurt, quark, ice cream, coffee and tea.
  • SteviJa GO! drink syrups: refreshing thirst-quencher; 5-8 drops in a glass of water for a delicious 'Stevinade'. Also great in yoghurt, quark, ice cream or a fruit punch.
  • SteviJa Zoetjes: for cold and hot drinks; they dissolve quickly and taste like sugar.
  • SteviJa Extract Pure: mainly for product development, but also for making your own jam or liqueur*.

* Within the EU the sale of alcoholic beverages containing stevia is not permitted.

Stevia does not feed the yeast and is therefore suitable for sweetening wine. Sugar is still needed for fermentation to obtain alcohol, but the amount of sugar can be reduced by as much as 50%.

For preserving jam, for example, the carrier inulin in SteviJa Zoetpoeder provides the preserving properties.

The inulin in SteviJa Zoetpoeder has the same preserving properties as sugar. The erythritol in SteviJa Kristal does not; that makes Zoetpoeder the most suitable for jam.

Our product development shows that Zoetpoeder is the most suitable for making ice cream. Not because of the sweetening power (which is the same), but mainly because the texture and taste are considerably better.

SteviJa products

The ingredients are listed on each product label and product page. Our sweeteners consist of steviol glycosides (E960a) with a carrier such as inulin or erythritol.

Reb A is derived from 'Rebaudioside', the name of the sweet substances in the stevia plant. Type A is the component most commonly used for producing sweeteners. The number indicates the percentage of Reb A present. The higher the percentage, the purer and sweeter the stevia extract powder.

No. (Stevia) plants contain protein to form cells. The extraction process takes only the sweetener out of the leaves; there is no protein in the stevia powder.

SteviJa Zoetpoeder contains the carrier inulin and resembles icing sugar in structure. Its sweetening power compared with sugar is 1:4 to 1:12. SteviJa Kristal is enriched with erythritol and resembles sugar more closely in structure; its sweetening power is 1:1 to 1:3.

Unlike Kristal, Zoetpoeder has a preserving effect and is therefore better suited to jam, for example.

No. SteviJa Kristal consists of erythritol and steviol glycosides, SteviJa Zoetpoeder of inulin and steviol glycosides. The nutritional values are on the product page.

The ingredients used are listed on SteviJa products; the exact recipe is not disclosed. The stevia used complies with the EU standard (95% steviol glycosides or higher). The stevia varies per product, depending on the use. Through research and product development SteviJa works on taste and texture. Besides steviol glycosides we use carriers such as inulin and erythritol.

In pure form, in diluted solution, stevia is about 200 to 350 times sweeter than sugar. Carriers make stevia easier to dose. Pure stevia extract is available in the webshop as SteviJa Extract Powder.

No, not always. It depends on the purity of the stevia used. The EU sets a standard for the minimum quality and purity of stevia in foods; SteviJa complies with this standard. Read more on the page What is stevia?.

Dosage

The dosage of SteviJa Zoetpoeder compared with sugar is 1:4 to 1:12. In small quantities: a quarter of a teaspoon equals 1 teaspoon of sugar. In larger quantities, for example when baking a cake: 25 grams equals 250-300 grams of sugar. For extensive baking tips and recipes, see the cookbook 'Koken en Bakken met Stevia' (in Dutch).

The dosage of SteviJa Kristal compared with sugar is 1:1 to 1:3. In small quantities: 1 teaspoon equals 1 teaspoon of sugar. In larger quantities, for example when baking a cake: 50 grams equals 100-150 grams of sugar. For extensive baking tips and recipes, see the cookbook 'Koken en Bakken met Stevia' (in Dutch).

No, no carbonation has been added to the syrups. You can use the syrup in sparkling (mineral) water to get a fizzy lemonade. A glass contains only about 1-3 kcal. Use 5-8 drops for a delicious 'Stevinade'.

Shipping and returns

Yes, in the afternoon you will receive an e-mail from DHL with information about the delivery.

Within the Netherlands you pay € 4.99 shipping; from € 30.00 we ship free of charge. Shipping to Belgium costs € 6.95.

Every working day at 15.30 SteviJa ships all parcels for which payment has been received. With payment by iDEAL, Bancontact, PayPal or credit card this is always the same working day. With a bank transfer it may take a day longer.

Yes, you can pay by card at our premises. Pick-up is by appointment only.

We usually use biodegradable padding: the green cubes. These can go in the organic waste. Sometimes we use paper; like the box, that can go with paper/cardboard. Exceptionally we reuse material from our suppliers, which may be white plastic (plastic waste).

In short: green = organic waste, white = plastic waste, paper = paper. In doubt? Put a cube in lukewarm water: if it dissolves, it is biodegradable.

You can refuse the parcel on delivery. It will then return to the sender at no additional return cost. Afterwards, contact our customer service for the refund.

Contact our customer service within 14 days of receipt via klantenservice@stevija.nl or the contact form. We will then send you the return instructions. See also shipping and returns.

Other

Inulin is a soluble plant fibre. It is made from chicory root, a relative of chicory and endive. Inulin is a soft white powder and the carrier in SteviJa Zoetpoeder; it gives Zoetpoeder its powdery structure.

Erythritol is obtained from plant sugars, found in fruit and fermented foods among other things. The sugars are mixed with water, fermented and crystallised; after purification no fruit sugars or yeast remain. Erythritol is the carrier in SteviJa Kristal and gives it its crystalline structure. It provides 20 kcal per 100 g, compared with 400 kcal for sugar.

Baksoda wordt ook wel zuiveringszout genoemd en bestaat uit natriumbicarbonaat.

The sweetener stevia (steviol glycosides, E960a) is named after the plant Stevia rebaudiana Bertoni; aspartame is a synthetic sweetener. Another difference: stevia remains stable at high temperatures. Where some synthetic sweeteners lose their sweetening power when heated, stevia is very suitable for cooking and baking.

The cookbook 'Koken en Bakken met Stevia' (in Dutch) has more than 100 pages and 84 recipes: baking recipes, breakfast, salads and dressings, lunch, starters and side dishes, sauces and toppings, desserts and drinks. The baking tips in particular make using stevia in the kitchen much easier.
