Pumpkin pudding with apple sauce

Ingredients
Pumpkin pudding
- 1 small pumpkin (1 kg)
- 200 grams crème fraîche
- 50 grams SteviJa Kristal
- 1 sachet agar-agar
- 250 ml organic apple juice
- Peel of 1 lemon
- 1 tablespoon SteviJa Zoetpoeder
- ½ teaspoon cinnamon
- 50 ml cold water
- ½ tablespoon potato starch
Preparation
Pumpkin pudding
Cut the pumpkin in half and remove the seeds and fibres from the centre. Then cut the pumpkin into pieces and boil them until soft, so that you can blend them to a pulp. Drain off the water and blend the pulp, crème fraîche, SteviJa Kristal and the sachet of agar-agar powder until light and airy. Then put the pumpkin mixture into pudding moulds of your choice and place them in the fridge until cooled and set.
Pour the apple sauce over the pumpkin pudding and garnish with whipped cream (whipped with SteviJa Zoetpoeder) and a pinch of cinnamon.
Apple sauce
Heat the apple juice, lemon peel, SteviJa Zoetpoeder and cinnamon in a small saucepan. Remove the lemon peel after 2 minutes. Mix the starch with the cold water to a paste and stir it into the warm apple sauce. Stir gently for another minute, then leave to cool in the fridge.
